Amanda's Zesty Turkey Meatloaf
1 pound ground turkey
2 eggs (or egg substitute)
1/2 cup salsa (I recommend the corn and black bean salsa for extra flavor!)
1/2 cup chopped bell pepper (red, yellow, and orange look the prettiest)
1/4 cup chopped onion
1/2 cup dry bread crumbs
lemon pepper to taste (or Mrs.Dash works too)
Worchestershire and ketchup for glaze (if desired)
Combine the turkey, egg, salsa, bell pepper, onion, bread crumbs and seasoning. Mix
well with hands until blended. Press mixture into a loaf pan. Bake in a 350 degree preheated oven for 45-50 minutes or until meatloaf reaches at least 165 degrees with a meat thermometer. If you want a sauce/glaze for the top, mix together some ketchup and Worchestershire sauce and brush on the loaf for the last 10-15 minutes of cooking. Enjoy delicious, zesty meatloaf sandwiches for days!
